Renán Cancino is the wine maker at El Viejo Almacén and makes very traditional wine in a small town called Sauzal in the Maule region. He works with vines that are up to 300 years old and produces wines without any modern technology, spraying or sulphites. Converted to biodynamics in 2010.
Fermentation takes place in outside lagares, destemming is manual using a bamboo salander, natural yeasts, and a gentle press using rocks (placed on top of the grapes). Renán studied agronomy and gained experience in a co-operative before setting upon his own in Sauzal - drawn to the area for its cooler climates and granite-based soils.
This is an incredibly vibrant wine using 100% Carinena grape; The wine is clean, focused and pure red fruit with a medium-body. Earthy and slightly grainy tannin provides a long complex finish. We love it!
