Renán Cancino is the wine maker at El Viejo Almacén and makes very traditional wine in a small town called Sauzal in the Maule region. He works with vines that are up to 300 years old and produces wines without any modern technology, spraying or sulphites. Converted to biodynamics in 2010.
Fermentation takes place in outside lagares, destemming is manual using a bamboo salander, natural yeasts, and a gentle press using rocks (placed on top of the grapes). Renán studied agronomy and gained experience in a co-operative before setting upon his own in Sauzal - drawn to the area for its cooler climates and granite-based soils.
This is an incredibly vibrant wine using 100% Pais grape; almost incandescent garnet color and juicy, fresh fruit that tastes like you’re biting into bright berries straight off the bush along with some subtle smoke and spice. We love it!
