The grapes are picked by hand with great respect for the environment. The philosophy of the domain is to “compose” wines in connection with the soil type, the topography, the grape varieties and the microbial life of the soils i.e. making wines by combining what nature has to offer with the winegrower’s personality.--- The wines of La Cadette represent a brand which groups together two estates: La Cadette, Montanet Thoden and a vinification business: La Soeur Cadette.
" 100% organic melon de bourgogne. Pressing of whole bunches, alcoholic and malolactic fermentation in stainless steel tanks for 6 months. The first time we tried a Melon de Bourgogne from this domaine we were amazed by the purity of the fruit and the depth of flavor (this was at the iconic Paris restaurant, Le Chateaubriand). This wine is a great favorite of ours especially given the price considering how little is produced. It is a perfect food wine marrying well with many flavors, but it comes into its own with terrines, parfaits, charcuterie and other light meat dishes. "
