Domaine de la Cras is a 160 hectare farm and 8 hectare vineyard located on the hills overlooking Burgundy’s capital city. In 2013, the city of Dijon chose young vigneron, Marc Soyard, to farm the land, grow the property, and plant more vines. In return for the land, the cave, and the ability to bottle his own wine, Marc must pay a “tax” in the form of bottles of wine each vintage to the city of Dijon. Marc has also agreed to allow the domaine to be open to the public year round. This is a little price to pay for the luxury of farming and producing the city’s monopole wine.
Before becoming the official vigneron of Dijon, Marc Soyard spent six years at the prestigious Domaine Bizot in Vosne Romanée working as the vineyard manager. While at Bizot and not in the vines, Marc was under the guidance of Jean-Yves Bizot learning his winemaking process. With a passion for the same organic farming practices and “hands-off philosophy” in the cellar, Marc has incorporated to Domaine de la Cras that which he learned at Domaine Bizot. In the cellar, the work is kept simple as all vinification is done with natural yeasts, minimal sulfur use, and élevage is traditional in a mix of new and used barrels.
Bourgogne Hermaion - These grapes come from Marc’s 0.20 hectare parcel in Ladoix which suffered hail damage in 2016 and again in 2017, resulting in painfully low yields. Vinified 100% whole cluster with semi-carbonic maceration. 18 months elevage in used barrels and demi-muids. Bottled in Spring 2019.
