Chateau Paquita is a red wine made by Sistema Vinari in Felanitx, Mallorca.
Sistema Vinari is an idea by Eloi Cedó, a artisanal oenologist and winemaker, who created this brand in 2011 with the help of 4 Kilos. The production method is straightforward, with plenty of attention and care, a lot of know-how and no added oenological products.
Chateau Paquita is a blend of Callet, Manto Negro and Monastrell. All the varieties ferment separately and Monastrell undergoes semi-carbonic maceration. During fermentation, they carry out a few very light pressings by hand, then the wine is transferred to used 500 litre barrels. It is blended and then rests in tubs for 3 months, and in the bottle for 6 months.
