The acclaimed vineyard in Chablis Pattes-Loup dealt with 80% shortfall in its 2016 Chablis, and with five full time employees to pay at Pattes-Loup, Thomas had to lean on friends to help balance the books, and purchased this extraordinarily good high altitude chardonnay from friends such as Etienne Fort and Baptiste Delmas working on the highest vineyards in Limoux. All grapes sourced are from organic certified vineyards.
The earlier harvest date enabled Thomas to pick the grapes and press the juice, before shipping up to his cave in Chablis where it was aged during the winter before bottling in April.
Ripe Chardonnay with even a golden hue; fruitier flavours than most other chardonnay wines. Ripe yellow fruits, apricots and honeysuckle with crisp acidity. A ripe Chardonnay with good flavours from an exceptional winemaker.
